Squat lobsters are not actually lobsters, but a species of shellfish similar to small crabs. They’re relatively common in Scottish waters but tend not to be available elsewhere, so you can just use prawns if needed. If you can find prepared tails though, they make a flavoursome addition to this warming curry. — Bally Philp
