I’m not trying to make cheese on toast ‘healthy’ by stealthily slinging in a few broccoli spears, but I genuinely do think this is a more balanced cheese on toast, as the brassica’s mineral freshness is a welcome contrast to the rich, molten cheese. For such a quick plate of comfort food, this is a really easy way to add in an extra portion of veg for the day, without spending loads of extra time chopping and peeling.
