The idea for this dish was inspired by an interview I read with chef Margot Henderson describing the cabbage pasta with truffle oil that her now husband Fergus cooked for her when they were first dating. She said she thought to herself: ‘God, he’s cool’ (cabbages are cool!). Brussels sprouts are really like little cabbages, so being in miniature makes them cute and cool.
