This dish of many contrasts is one of my absolute favourite ways to show off versatile courgettes; the cooling yoghurt amplifies their smoky character after a few minutes on the griddle pan, followed by a rest in the grassy fresh marinade. To top things off is a savoury seeded brittle, which you’ll want to crumble over everything, or just eat on the go, like the world’s best sesame snap.
