Broad beans are a pain to double pod, but they always taste better for it. Frozen broad beans are picked while they’re young and tender, and the work of removing them from the hairy pods has already been done. It’s for these reasons, as well as the fact that they’re available year-round, that I suggest using frozen ones. If using fresh, you’ll need about 1.25kg (2¾ lb) of broad beans in their pods to yield 300g (10½ oz) of podded beans.
