Chard is a member of the same family as beetroot, so it can taste earthy without other complementary flavours in the mix. Warming spices are a great foil to its mineral character, and a little creaminess from mild paneer doesn’t hurt either. The longer you can leave the cheese to marinate, the better, as it turns more complex in the spice mix.
