The batter in this recipe is made from a combination of chickpea and plain flour, which as well as being a good source of protein (from the ground chickpeas), cooks into a deliciously nutty and complex tasting pancake the longer the batter is left to rest. It’s inspired by the thin, lacy dosas – fermented pancakes – from South India.
