If you’re familiar with the windy effects that Jerusalem artichokes (sunchokes) can have on the digestive system, then I imagine you’re smiling at the conscious inclusion of ‘cosy’ in the recipe title. For this risotto I use the vegetable bouillon that comes in tubs; if you’re using a stock cube, break it in half to dissolve in the hot water and add more seasoning to taste.
