Tomato and coconut is a seriously underrated flavour pairing. The acidity from the tomatoes is a sharp foil to the sweet fattiness of coconut. I suppose it’s a modern twist on cream of tomato soup, with an added boost of protein from the beans. The spiced oil that gets drizzled on top of the deceptively rich soup adds a welcome hint of crunch and pops of earthy spice.
