When I want to get dinner on the table quickly, a meal cooked on the hob is usually my go-to, and these crispy fritters are rich in protein from the quinoa, and a great way to use up small amounts of carrots or a lone sweet potato.
A pouch of cooked quinoa speeds things along, but by all means cook your own if you have it, just be sure to drain and dry it well. The bright acidity of cherry tomatoes is the perfect complement to the crispy fritters, hot from the pan.
