People can be sceptical of aubergines that are steamed, pale and bare, finding reassurance in a Benidorm bronzage, with rich caramelisation all over. In fact, steaming is a speedy way of turning aubergines tender, without them becoming a sponge for oil. Once steamed, these are basted in a miso dressing before being grilled. Black rice vinegar is available in Asian supermarkets or online.
