Heat the oil in a frying pan over a medium heat. Add the breadcrumbs and garlic to the pan and stir to coat in the oil. Cook for 4–5 minutes, stirring very regularly, until the breadcrumbs are golden and toasted. Tip into a bowl to stop them cooking further and stir through the herbs. Zest over the lemon and stir again.
