Banh mi is a traditional Vietnamese sandwich that features some sort of roasted meat (usually pork) and lots of fresh and pickled vegetables. It almost always has some type of spicy sauce. My wife is a huge banh mi fan and usually wants just the traditional version. Don’t fix what isn’t broken, right? She gave this version two thumbs up even though I made some substitutions. These substitutions are necessary unless you want to start your own pickling production line just to make a freakin’ sandwich. The key to this sandwich is chopping up the pork and simmering it for a few minutes in the sauce. It makes the pork extra tender and gives it loads of flavor. Trust me on the fish sauce. It makes everything click.
