Many of us associate the flavour of Heinz tomato soup with comfort. By adding sweet red pepper to this tomato soup recipe it comes close to the flavour that is so popular. This is one for the days you want to be wrapped in warmth.

Ingredients

  • ½ onion, peeled and chopped
  • 25 g butter
  • 1 tablespoon

Method

  1. Put everything, apart from the cream, into a saucepan and bring to the boil. Season and simmer for 25–30 minutes.
  2. Blend the soup until smooth. Add the cream and adjust seasoning. This can be made ahead and stored in the fridge for up to 3 days.
  3. Stir the pesto in a bowl to loosen the texture, adding a little extra olive oil if needed.
