I am always surprised that pumpkins aren’t grown more widely for eating as they are easy to cultivate (although they do need a lot of water). In many European countries you get used to eating it as a vegetable and buying it everywhere from greengrocers to supermarkets. It is quite a sweet vegetable so the spices in this soup help cut this. Butternut squash is a great alternative.
