Humble frozen peas… They have a place in all our freezers and are the choice vegetable of many on a week night, but rarely do they see the light of a restaurant or a dinner party. Why is it that we downgrade these delicious little spheres of sweetness and goodness? This is a smooth, velvety soup (a velouté) that keeps all the colour and flavour of the peas. It is simple to make and can be served at any time of the year.
