‘House’ meaning the speciality of the house. I call it this because the ingredients can vary according to what you have in your fridge and store cupboard at the time – swap the spinach for a bit of green cabbage, the onion for spring onion or leek. It is flexible and can contain your favourite ingredients (within reason!). It needs onion of some sort, greens of some sort and pulses, pasta or rice. ‘Minestrone’ literally means ‘the one with many ingredients’.
