I think most cauliflower tends to be eaten with cheese sauce and it is the cheese sauce that most people love. And yet here is a readily available vegetable that we are not making full use of. Mulling over it one weekend, I was out eating curry and there on the menu was the answer – Aloo gobi, the well-known Indian side dish of cauliflower, potatoes, onion and spices. This spiced cauliflower soup was born. Try it – you will be converted.
