One summer, travelling along the coast of France, we became experts on salad Niçoise (it was our benchmark for assessing local places and cafés). If the Niçoise was good then the place got the thumbs up. All the ingredients are easily available, but somehow I cannot bring myself to make it in the winter and it is just not the same on a rainy autumn evening. Here, therefore, is a winter salad using all the same ingredients that teases with the suggestion of summer to come.
