I love the thought of sharing different dishes of Italian slow-roast vegetables, but this is a great way to get all the flavours in portions that are really easy to serve. It is so versatile – you can add mozzarella and serve it as a veggie main course, or serve it with cold meats and cheeses as a lunch. The peppers improve after a couple of days, so this makes it an ideal dish to make ahead of time.
