A Daisy recipe. Have I mentioned Daisy? Fabulous cook, excellent chalet host and a member of the French office team for a season. Part of her job was working with me on the menu plan so we talked about food endlessly and swapped ideas. Up until this point I had always mixed the spinach in with the filling for a spinach tart, but this recipe layers the spinach and the texture is much less ‘eggy’. It gets my vote!
