Camembert baked in its own box was a solid favourite in the chalets for many years. It still remains a fabulous and fun starter – everyone loves the runny cheese – but we wanted a new way to serve it. Breadcrumbs were old hat and unreliable, and puff pastry too tasty in its own right. Light filo pastry, however, makes a great coat when you want to concentrate on the filling. These can be made ahead and popped in the oven just before you want to eat.
