Kofta in Turkey refers to anything (almost anything) fried, so really these are more what I would call a fritter. Olçay and Brian owned a little house we rented in Turkey one summer. We spent the days working and the evenings cooking up ingredients from the garden. We cooked on a simple hob or in the wood oven at the end of Olçay’s market garden outside the back door. She taught me many dishes traditional to her family, but this is the one I still cook the most.
