Away from the coast, fresh crab is such a treat that I am reluctant to do anything other than enjoy it with a little fresh mayonnaise. This led me to the idea of doing something with salmon, which is easily available but ordinary on its own. We have potted crab and prawns, so why not salmon? This is not quite a traditional recipe (somewhere between potted fish and salmon paté) and is intended to be eaten cold, with toasts or crusty bread.
