Here’s a recipe that makes use of any kind of prawns, from the small, shell-on, frozen Atlantic prawns to huge, exotic Madagascan ones. It is also foolproof – a recipe that leaves nothing to chance and takes minutes to prepare.


  • 1 clove garlic
  • 1 teaspoon Dijon mustard
  • juice of ½


  1. Chop the garlic finely and while it is still on the chopping board, sprinkle it with salt. Using a table knife work the salt and garlic together. The salt will act as an abrasive and the garlic will turn to a paste.
  2. Put the garlic paste into a bowl and add the mustard, lemon juice, oil, onion and parsley and mix well. Taste it and season. Add the prawns, stir w
