Prawn and sun-dried tomato wraps

Use small, shelled prawns or larger tiger prawns as you wish for this wrap.

Ingredients

  • 250 g cooked prawns, drained well
  • 8 sun–dried tomatoes, drained
  • 4 tablespoons

Method

  1. Mix the prawns, tomatoes, mayonnaise, tomato purée and Worcestershire and Tabasco sauces. Taste and season.
  2. Follow the method for finger food wraps using the butter as the ‘glue’. Lay 2–3 whole lettuce leaves on the wrap, then a line of prawn mix and roll up tightly. Wrap in cling film and chill for at least 1 hour. Slice
