Falafel, lime and chilli wraps

This is an excellent wrap as a veggie option on a buffet table, but is delicious for everyone!

Ingredients

  • 4 large falafels or our veggie burgers (see tips)
  • 4 soft flour tortilla wraps
  • 2

Method

  1. Slice the falafels into three. Mix the yoghurt, lime zest and juice and chilli. Taste and season with salt and pepper.
  2. Follow the method for finger food wraps using the butter as the ‘glue’. Spread the salsa, then falafel, then yoghurt and finally add the rocket. Roll tightly and wrap in cling film. Chill for at least 1 h
