A mini, fast version of our pastry baskets, made with ready rolled pastry and some egg. Make them ahead and pile them high with hot or cold fillings. Ok, so they are square vol-au-vents, but being square and homemade means that they are fabulous and not naff!

Ingredients

  • 500 g packet ready rolled puff pastry
  • 1 egg, beaten

Method

  1. Unroll the pastry straight onto a baking sheet. There is no need to grease or line it. Cut the pastry into 16 equal sized oblong/squares and move them a little apart from each other so they cook more evenly. Using a small, sharp knife score a line just inside the edge about 1cm all the way round each little piece, making sure you do not go all the way through the pastry.
