Ingredients

  • 1 sheet filo pastry (defrosted if frozen)
  • olive oil
  • 20 g fresh parmesan cheese, grated

Method

  1. Brush the filo sheet lightly with oil. Sprinkle half of the cheese over half of the pastry and fold the uncovered half over the covered half. Press flat with your hands. Sprinkle half of the remaining cheese over half of the folded pastry and fold again.
  2. Brush with olive oil and season well with salt and pepper. Cut into 6–8 strips (about 4cm wide) and lift ont
