If you have a fish market nearby, do use it or it will disappear. In Leicester (about as far from the sea as you can get in the UK) we have one of the best fish markets I have ever been to. Stalls are piled high with our native species and more exotic fish, such as giant prawns from India and salt fish from the West Indies. This pie is great made with fresh fish, but it works just as well with fish from your freezer and the rest of the ingredients can be kept in your store cupboard.
