Excellent for fast entertaining – you can prepare the fish and lentils ahead and be out enjoying yourself with your friends then simply pop it into the oven and be eating in 15 minutes. Unusual enough to be special; simple enough to be foolproof!

Ingredients

  • 4 cod fillets, about 130–150 g each
  • 50 g butter, melted

Method

  1. Make the sage and onion lentils. Place the chopped onion, crushed garlic, sage leaves, celery, olive oil and mustard in a saucepan and cook on a medium heat, covered with a tight-fitting lid, for 5–10 minutes or until the onions and celery are well-cooked and soft.
