A stressed host makes an unhappy party and it is the same in ski chalets. This has made us rewrite so many recipes to try and eliminate all the pitfalls. Hollandaise sauce was what we wanted, so we found a foolproof way to cook it. This is an extremely buttery version made with a roux. It has all the richness of Hollandaise, but none of the anxiety.
