When the other Lucy and I are cooking we play a game. We have to create the meal we would eat if we knew today was our last day on earth. We play it often and it is amazing how often it changes, but scallops appear on both our menus more often than not (sometimes nudged off mine by fresh crab...).

Ingredients

  • 1 clove garlic
  • 50 g butter
  • 16 large or 36 smaller sca

Method

  1. Cook the noodles in salted boiling water until just tender. Drain in a sieve under cold, running water to remove excess starch. This can be done ahead of time.
  2. Chop the garlic and, while it is still on the chopping board, sprinkle with salt and work the salt into the garlic with a knife. The salt will act as an abrasive and the garlic will turn to a paste.
