We were trying out some new recipes and left some mascarpone in a saucepan over the heat by mistake. It thickens as it cooks – we never knew. We experimented and here we are!


  • 1 250 g tub mascarpone
  • 250 g grated cheddar cheese


  1. Put the mascarpone, grated cheese and mustard in the saucepan.
  2. Melt together gently, stirring all the time. Do not boil or the sauce will become granular. Season to taste.
