I find the trouble with Lancashire hotpot is I never know how thick the sauce is going to be as it is all cooked together under the potatoes and hidden from view. So I cheat. The meat and the potato topping are cooked separately in this recipe, then reheated together so the flavours mix – and you end up with the thickness of sauce you want.
