Eating with Indian friends at their home, I have learnt that their cooking is much more varied than the selection of stew-like curries we come across in Indian restaurants. They slow cook whole joints of meat and eat potatoes instead of rice. These lamb shanks are as happy served with a creamy mash and curly Kale as with rice and Indian side dishes. Isn’t that what true globalisation is really about?
