Sardinia is so Italian and yet I found dishes there that surprised me. Influences from the North African coastline are everywhere. This is one of them – the white wine, garlic and spinach are all very Italian, but the whole lemon, coriander and yoghurt are not at all. Geography plays such a big part in food doesn’t it? I love to cook this on a warm summer evening and be transported to the rocky coastline of Sardinia and the sounds and saltiness of the Mediterranean sea.
