To me, Stilton is the king of cheeses. I am biased as I grew up in Leicester and this is a local cheese, but I still maintain it is one of the best, even after 15 years in France. I also believe that beef and Stilton is a great combo, so here it is in a pie. This is a great dish to prepare in advance. It’s easy to serve and welcomed by all.
