Use fresh or dried wild mushrooms for an extravagant and robust sauce for your steak.


  • 50 g dried wild mushrooms
  • 150 ml boiling water
  • 125 g


  1. Pour the boiling water on the dried mushrooms and leave to soak overnight.
  2. Fry the fresh mushrooms in the butter and oil over a high heat until they ‘squeak’. Drain the rehydrated mushrooms, reserving the liquid, and add them to the pan. Cook for a few minutes more. Stir in the flour.
  3. Add the reserved liquid to the mushroom/flour mix and stir well unt
