If you do not allow puff pastry the space to ‘puff’ it has a wonderfully doughy texture when cooked, really similar to suet pastry. It is ideal to use for this recipe and the mini basins or cups keep the pastry soft. If you buy ready rolled pastry sheets you can put your pies together in an instant – all the comfort of a pudding without the fuss.
