Chicken Veronique was a hit in the ‘70s. I remember the smell of it coming from the kitchen when my parents had dinner parties. We always had a bit of a treat for our tea if my parents were entertaining, so the smell of this cooking evokes the excitement of a treat in store, as well as childhood comfort. This is my version of my mother’s dish and a favourite when our family gets together.
