When I was sent this recipe from a colleague at an American chalet I cringed. You will too, but don’t knock it till you’ve tried it! Think about it – mayonnaise is basically oil and egg: oil makes the crumb crispy and egg sticks it on. Cornflakes are only salted, baked corn – crush them and you have a readyseasoned crumb. Marry all of this with pumpkin seeds and parmesan and you have something that as a whole is a lot better than any of the parts! Children will love to cook this with you.</
