We talk about global fusion these days, but New Orleans has been an example of different cultures coming together in a culinary way for well over 150 years. Jambalaya was an attempt by the Spanish to recreate paella, then it was influenced by the French bringing in spices from the Caribbean and by the African cooks who actually made it. This is a recipe given to me by my brother when he was at university there, which introduced me to the wonder that is Deep South cooking!
