Lasagne is a great dish to cram lots of lovely vegetables in to. Here, the sweet potatoes add colour and a wonderful texture, but once you’ve made the basic tomato sauce you can try adding your favourite vegetables to create different fantastic, vegetarian lasagnes.

  1. Put the cubed sweet potatoes into a roasting tin with the oil and black onion seeds and season well. Roast, uncovered, for 20 minutes or until the potatoes are soft and browned.
