I first really fell in love with the humble chickpea eating in a street cafe when I was in Morocco. I ate more vegetarian than meat dishes on that trip and chickpeas seemed to figure pretty heavily in most. The rich, almost creamy taste of chickpeas marries so well with the sharp flavours of this dish. When I make it, I am transported back to that hot, dusty, wonderful place where I first ate this dish.
