So many vegetarian main courses are stews or dishes with a crumb, cheese or nut topping. This is not. What a refreshing change!

Ingredients

  • 4 medium aubergines
  • 1 jar pesto
  • 100 g pine nuts

Method

  1. Cut the aubergines in half lengthways and lay skin down in a roasting tin in a single layer. Score a criss-cross pattern on the top surface with a sharp knife.
  2. Drizzle the aubergines with olive oil and cover the tin with foil. Bake for 30 minutes
