One of my mother’s friends once had an extra guest to dinner. She was cooking ‘Veiner Schnitzel’ and did not have enough to go round, so she coated a slice of white bread that she had trimmed to look like a piece of veal. It was not until the end of the meal that she realised she had enjoyed a lovely piece of meat while someone else had got the bread! Anyway, this is my homage to ‘Veiner Schnitzel’ for vegetarians!
