Great with grilled meats, plain stews or just add grated cheese on top and grill it for a satisfying lunch dish.

Ingredients

  • 1 400 g tin of artichoke hearts
  • 4 large potatoes, peeled
  • 2

Method

  1. Drain the artichoke hearts and cut into quarters. Put into a roasting tin with the olive oil, garlic and chilli and season well with salt and pepper. Roast uncovered for 20 minutes.
  2. Meanwhile make the mash as described.
