This is a great-flavoured mash and is especially good as topping for a vegetarian dish as the lentils contain bags of protein.

Ingredients

  • 4 large potatoes, peeled
  • salt
  • 4 tablespoons red lentils
  • 25

Method

  1. Follow the recipe for mash adding the unsoaked lentils into the water at the same time as the raw potatoes. They will cook in the same amount of time. Drain well into a sieve (not a colander).
  2. Mash then stir in the butter and yoghurt.
