I was once eating in a ski chalet and the host had mis-read the serving instructions for our confit of duck, homemade apple chutney and sauté potatoes. She had mixed the apple chutney and potatoes together. I love working with the chalet hosts – the most unexpected twists happen! Here is the resulting recipe, which is excellent with game and duck by the way.
